Introduction
Although the word Smögåsbord is of Swedish origin and means literally “bread and butter table”, it is now in everyday language in all three Scandinavian countries, although its definition varies from Denmark to Norway to Sweden, but the basic principle of a groaning table with sometimes dozens of different dishes in the same in each. Within the last decade, the word Smögåsbord has been assimilated into our own language, and has gradually become one of the most popular ways of entertaining a large number of people, although it can be used just as successfully with small numbers.
In this book I shall try to show what a true Smögåsbord should consist of, and how to go about producing delicious, attractive food. Remember to warn your guests, who may perhaps be uninitiated into the ways of a true Smögåsbord, that contrary to popular belief, and although it is similar to a buffet, the fish should never be put on the same plate as the meat, the meat with the cheese, etc.
I do hope the reader will both enjoy preparing and eating from a real Scandinavian Smögåsbord. Happy eating!
